What better way to celebrate Inauguration day than with food! In honor of our incoming Vice President, Kamala Harris, I have come up with the following vegan cake recipe:
Mix the following dry ingredients together in a bowl:
1 1/2 flour (or use Bob’s Redmill 1:1 Gluten Free flour or use Einkorn flour)
1/2 c. coconut sugar or 1/3 c. brown sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. curry powder
1/2 tsp. ginger powder
1 tbs. cocoa powder
1 tsp. cinnamon
1 cup coconut milk (from a can that has been mixed well.)
1/4 c. water
1 tsp. vanilla
Mix the batter well and pour it into a greased bread pan and bake in a pre-heated 350* F oven for 35 minutes or until toothpick comes out clean. Let cool before eating.
Enjoy the cake by itself or top with a brown sugar glaze or with ice cream!
